During one of their many wars with the French, the British were forced to get their wine from Portugal. In order to make the wine stable enough to survive the voyage by sea in the days of sailing ships, they fortified it with brandy. The brandy halts fermentation, leaving behind 9 to 11 percent sugar. The result is Port.

It seems that almost anyone who permits themselves to try it develops quite a taste for Port. Port can last far longer than most wines after the bottle is opened, and in fact almost needs contact with air to put its best foot forward.
